Ingredients

12 servings
  • 1 tsp.Salt
  • 4large cucumbers, seeded, finely diced
  • 2 tbsp.Fresh lemon juice
  • 6medium tomatoes, finely diced
  • 1medium red onion, finely diced
  • 1 tbsp.Chopped fresh cilantro
  • 1jalapeno chile, chopped

Steps

    In large bowl, combine salt, cucumbers, lemon juice, tomatoes, onion, cilantro and Chile; mix well. Refrigerate, covered, 1 hour. Serve with chips, if desired.
