Harcha (or harsha) is a Moroccan pan-fried bread made from semolina. It's a traditional Moroccan breakfast bread which is very delicious that can be eaten with cheese or jam.

Harcha (or harsha) is a Moroccan pan-fried bread made from semolina. It's a traditional Moroccan breakfast bread which is very delicious that can be eaten with cheese or jam.
Steps

In a mixing bowl, blend together semolina, sugar, baking powder, and salt.

Add melted butter, and blend with your hands until the mixture is the consistency of wet sand.

Add 1/2 cup milk and mix until it forms dough.

It should be a quite moist, almost wet dough. Add more milk if necessary.

Leave the dough to rest for 20 to 30 minutes.

Take a small portion of dough and make small 1/2 inch thick disk. Similarly make all the harcha put of the dough.

Heat a non stick pan and grease with little butter.

Add one disk /patty or harcha and cook in medium low heat for 2 minutes.

Cook with lid on.

Flip the disk and cook for 1 or 2 minutes more.

When both sides are golden brown, remove from pan.

Repeat the process and make all the Harcha or pancakes.

Serve warm with jam, jelly, sour cream or cheese.
