Strawberry phirni

Phirni is basically a Punjabi delicacy.
It is very much similar to rice pudding or chawal ki kheer. The only difference is that in kheer we use whole rice and in phirni we use soaked and grounded rice.
I love the basic smooth and Creamy taste of phirni but this time some strawberries were lying in my fridge so thought of giving my own touch to this traditional dessert and added pureed strawberries to give a fruity touch to this recipe.

Soak rice for an hour.

Drain the rice and grind it with 2-3 tbsp of water. The paste shouldn't be smooth.

Puree the strawberries.

Boil the milk in a heavy bottomed pan.

Add the soaked rice to it and mix properly.

Cook it till the rice gets cooked and the milk reaches to a creamy consistency.

Add sugar and stir till the sugar dissolves completely.

Add cardomom powder and mix properly.

Switch off the gas and let it get cool to room temperature.

Add pureed strawberries.mix it.

Now put it in refrigerator.

Garnish with sliced strawberries,bananas, sweet boondi and chopped nuts. You can garnish according to your choice.
