In a bowl, combine the chestnut flour and sugar. Gradually add water, mixing to form a batter that is not too runny but not too thick.

Continue stirring, then add the salt and 2 tablespoons of extra virgin olive oil.

Pour plenty of extra virgin olive oil into a baking pan and add the batter.

Sprinkle the pine nuts and rosemary sprigs on top, drizzle with a couple of turns of extra virgin olive oil, and bake at 320°F (160°C) for about 40 minutes.

The castagnaccio is ready when cracks form on the surface.

Remove from the oven, pour off any excess oil, and let cool.
