In a baking dish or oven-safe pan, layer the onion slices on the bottom. Arrange the meat and vegetables in alternating layers—one piece of meat, then potato, then eggplant—repeating until all ingredients are used.

Pour the tomato sauce over the layered ingredients, cover, and bake in the oven for 30 minutes until the sauce thickens.
