Pyaaz kachori is one of the famous spicy food from Jodhpur and vicinity. These crisp, flaky, spicy deep-fried kachoris stuffed with onion potato filling are delightful treats.
Steps

Dry roast cumin, coriander, kasuri methi and fennel seeds. Let it cool and frind coarsely into mixie. Kachori masala is ready.

Chop half onion into small pieces and half into slices. In a pan add oil and once hot add asafoetida. Add onion and masala and saute until onion turns pink.

Add besan and roast it. Add rest of dry masalas and roast for a while. Add potato and mash it with masala. Keep it on low flame for 2-3 minutes. Close flame and add onion slices. Mix it propely. Cover it until cool.

Add ajwain to flour. Add oil and mix properly. Add water and knead dough like roti. Rest it for 15-20 minutes.

Once the mixture cools make equal size balls out of it. Make equal balls from dough. Flatten dough ball in hand and fill it with pyaz filling. Seal it properly.

Make all stuffed balls. Flatten with hand and make kachori. Take oil in pan. Once hot add kachori and fry for 5-6 seconds and take it out.

Fry all kachori accordingly. Let the oil cool for a while. Then add kachori in oil and fry it on low flame. It will take 10-15 minutes. Enjoy this hot kurkuri kachori with saunth chutney or kadhi.
