In a bowl put flour and sugar. Whisk well. Add margarine and rub in very well

Add yeast and mix well. Add in potatoes and mix well

Add eggs and start kneading dough. Then the milk, it should be slightly warm to the touch. Knead the dough well till smooth and pliable, about 5mins. Put a tablespoon of oil in a bowl and coat dough once, cover and let rise till double

Punch down and portion into sizeable buns. Grease a tray and line with parchment paper. Arrange buns on top and cover, let rise again till double.

Preheat oven to 180°C and bake for 20-25mins
