Ingredients

  1. 500 gdried figs
  2. 1/2 bottlesweet, fruity white wine
  3. 4 (225 g)turkey fillets
  4. 1 tablespoonbutter
  5. 2 tablespoonsdark orange marmalade
  6. 10mint leaves finely chopped plus a few extra for garnish
  7. juice of half a lemon
  8. to tastesalt and pepper

  1. 1

    Put the figs into a pan with the wine and bring to a boil, then simmer very gently for about 60 minutes

  2. 2

    Leave to cool and refrigerate overnight

  3. 3

    Melt the butter in a pan and fry the turkey fillets until they are cooked through

  4. 4

    Remove from the pan and keep warm.

  5. 5

    Drain any fat from the pan then pour in the juice from the figs.

  6. 6

    Bring to the boil and reduce until about hundred and 50 mL remain

  7. 7

    Add the marmalade, mint leaves and lemon juice, then simmer for a few minutes.

    Season to taste

  9. 9

    When the sauce is thick and shiny pour it over the turkey and garnish with the figs and mint leaves
