Ingredients

  1. Chicken (any part)
  2. Oyster mushrooms
  3. Chicken liver
  4. 3shallots
  5. Galangal
  6. 2 stalkslemongrass
  7. leavesKaffir lime
  8. 1tomato
  9. 1/2onion
  10. Dried chili peppers
  11. Tamarind (or substitute with lime if unavailable)
  12. Salt
  13. Fish sauce
  14. Stevia
  15. 3/4 cupplant-based coconut milk (200 ml)
  16. 1 cupwater

Steps

  1. 1

    Pour in the coconut milk and bring to a boil. Add the water, then add sliced galangal, lemongrass, kaffir lime leaves, crushed shallots, and tamarind. Simmer until fragrant.

  2. 2

    Add the chicken, onion, liver, tomato, and oyster mushrooms. Do not stir; let it cook until the liver is done.

  3. 3

    Season to taste and add halved dried chili peppers.
