Place 1 tbsp of oil in a hot pan, add couscous, onions, stock, pinch of salt bring to a boil, turn heat off, cover and let it rest until stock is completely absorbed and couscous is light and fluffy, set aside.

In a hot pan cook chorizo

Once couscous has cooled, add all the other ingredients, toss to incorporate well and serve!!
