Coconut Rhubarb Cake
For breakfast/brunch or light dessert
Cooking Instructions

Preheat oven 350°
- 2
Mix dry ingredients, add eggs and yogurt and partially mix

Fold in rhubarb and coconut. Do not over mix.

Pour into grease 9x13 pan
- 5
In same bowl add all topping ingredients and mix with pastry blender until crumbly. Sprinkle evenly over top of cake

Bake 45 minutes or until cake tester comes out clean Cool completely before cutting

This cake is so moist and delicious. If you want it not to have the alcohol, use extracts instead. You can also add the rum to the sauce while cooking it to evaporate the alcohol but leave the flavor. Great at parties, dinners or anytime.
