This soup is perfect for cooling off on a hot day.

Wash the bitter melon and remove the seeds. Mix the fish paste with chopped wood ear mushrooms and green onion, then add seasoning powder. Rinse the pork spare ribs with salt, then add to a pot of water and simmer until the meat is tender. Stuff the fish paste mixture into the bitter melon until full.

Add the stuffed bitter melon to the pot. When it comes to a boil, skim off any foam, then cover and simmer until the bitter melon is tender. Season with 2 tablespoons fish sauce, 1 teaspoon seasoning powder, and a little sugar to taste.

Ladle the soup into bowls and top with chopped green onion, cilantro, and a sprinkle of black pepper.
