This is a recipe that I just came up with. I used to eat this salad every day when I first started trying to eat healthy. It tastes really nice.

This is a recipe that I just came up with. I used to eat this salad every day when I first started trying to eat healthy. It tastes really nice.

Cook the rice according to the instructions on the pack. Let them cool down a little.

In a bowl add, cucumber, red radish, blueberries, beetroot, tomatoes and spinach. Season with salt, pepper, balsamic vinegar and a dash of olive oil. Mix well.

Place the rice at the centre of the serving place and surround it with the mixed salad. Top it with crumbled feta cheese and serve.
