You can buy 2kg of desiccated coconut from Amazon for around £6.

This makes around 400ml of thick coconut milk. If I bought that from the shop it would cost me around £2 for a tin that size or over £1 for a ready to drink litre carton of thinned drinkable coconut milk so you can definitely save a few bucks making your own.

2kg of desiccated coconut will make this recipe 16 times over. Thats 16 ready to drink litres for £6!

Coconut flour is VERY expensive here, also almost £3 for a pound where you can buy wheat flour twice that amount for pennies.

Double savings as a little coconut flour goes a long way! Keep it in the freezer and take it out as you need it. It won't last long in the cupboard without preservatives

  1. 1000 mlhot water
  2. 120 gunsweetened desiccated / shredded coconut

    Put the coconut and hot water into a blender and puree until thick and creamy. This will take several minutes

    Strain through a fine sieve, squeezing out the coconut solids left in the sieve well. Tie them in a piece of muslin straining cloth and squeeze them again. You'll end up with something that resembles that Moon Sand that the kids play with!

    Pour the milk into a clean lidded container and store in the fridge for up to 3 days

    Shake before use as it will start to separate as it stands

    Now for the pulp you have leftover!

    Once you've squeezed every drop of milk from the pulp, spread it out over a baking sheet and let it air-dry for 24 hours

    Once dried, fork it through and give it a pulse through your food processor. You've made coconut flour!

    Store in a lidded container in the freezer and start looking up those coconut flour recipes!
