Ingredients

  1. For making mango bavarios:-
  2. For making crust:-
  3. 150 gmsDigestive biscuits
  4. 80 gmsMelted unsalted butter
  5. For making Bavarian cream:-
  6. 11/2 tbspAgar agar powder
  7. 4 tbspHot water
  8. 250 mlHeavy cream
  9. 1 cupFresh mango pure
  10. 1 tbspFresh lemon juice
  11. 2 tbspIcing sugar
  12. 1 cupChopped mango cubes
  13. For Mango jelly:-
  14. 2 tspAgar agar powder
  15. 4-5 Fresh cherries
  16. 2 tbspSugar
  17. 1/2 cupFresh mango puree
  18. 500 mlWater
  19. 1/2 tspFresh lemon juice
  20. For garnish:-
  21. 6-7Fresh blueberries

Cooking Instructions

    For preparing crust:-

    Line a springform cake pan with parchment paper and keep aside.

  3. 3

    Place digestive biscuits in to a Ziploc bag,and crushed with the help of rolling pin into fine crumbs.

    Transfer biscuit crumbs to a bowl,add melted butter and mix well.

  5. 5

    Pour mixture into prepared pan,press down the base firmly and place in fridge for 30 minutes.

    For preparing Bavarian cream:-

    Pour chilled cream into big bowl,add 2tbsp of icing sugar.

    Whip cream until stiff peaks and place in fridge to be used later.

    In a pan add 1 cup of fresh mango puree,add 1tbsp of lemon juice and mix well.

    Pour 4tbsp of hot water in a bowl,add 1 1/2tbsp of agar agar to water and mix until agar agar is fully dissolved.

    Add agar mixture to mango puree and mix well.

    Take out whipped cream from the fridge and mix mango agar mixture to it.

    Remove cake pan from the fridge,pour cream over crust and spread evenly with the help of spatula.

    Place mango cubes on top of cream and place pan back in fridge for 3 hrs.

    For preparing Mango jelly:-

    In a bowl mix 2 tsp of agar agar powder,with 2tbsp of sugar.Mix well.

    Add 500ml of water in a pan.Add agar-sugar mixture to water and mix until sugar and agar powder is fully dissolved.

    Add 1/2cup of mango puree,along with 1/2 tsp of lemon juice to pan and mix well.

    Strain the mixture in bowl,this will results in a smooth jelly.

    Transfer strained mixture to pan turn on the heat to high,while stirring continuously bring mixture to boil.

    Once mixture comes to boil,reduce flame to low and stiring continuously boil for 2 more minutes.Remove from heat,and allow mixture to cool down for few minutes.

    Pour mango jelly over mango cubes,tilt the pan to spread jelly all over the cubes.Place cake pan back to fridge again and chill for 3 hr atleast.

    Unlatch the pan and gently lift the bottom of the pan and place on board or rack.

    Garnish with fresh cherries and blueberries.
