Deep fry the egg plant first and then potatoes.. Put it aside

Then take a pan.. Put in some oil then put mustard seeds, then chopped onions

Saute for a while until a bit brown add garlic paste then tomatoes..

Then turmeric powder, when the oil comes up add little curry powder, then potatoes and eggplant..

Garnish with coriander leaves. Best served with Indian Roti
