Kinda a Japanese mother sauce. It's a tempura dip, sure, but you find this as the base sauce for dressings, marinades, you name it.

Just combine all of the ingredients in a sauce pot and bring to a boil. This will cook off the alcohol in the mirin and help dissolve the dashi.

Play around with the recipe a bit. You might like want to use a little more or less water depending on the application. If you've got access to fresh dashi, sub it for the water and granules. Find the balance that works for you.
