Ingredients

4 servings
  1. 7-8baby brinjals
  2. 7-8baby potatoes
  3. 1 cupfinely chopped/paste onion
  4. 1 cuptomato puree
  5. 1 tbspginger garlic paste
  6. 2 tbspoil
  7. Stuffing
  8. 1/2 cuppeanut powder
  9. 3 tbspbesan
  10. As neededsalt
  11. as neededcoriander powder
  12. as per tastecumin
  13. as neededturmeric
  14. 1 tspsugar (optional)
  15. as neededred chilli
  16. 1 tspgaram masala
  17. 1 tbspred garlic chutney
  18. 1 tbspoil

Cooking Instructions

30 minutes
  1. 1

    Wash, peel and make slit in potatoes and brinjals. Mix all stuffing ingredients and stuff it in potatoes and brinjals.

    Steam this stuffed veggies for 15-20 minutes or until done. In a pan add oil. Once hot add cumin, asafoetida.

    Add onion paste and roast until nice brown.add tomato puree and spices. Cook until oil separates. Add sugar and 1-2 cup water.

    When gravy starts boiling add steamed veggies. Cook until gravy is thick. Enjoy this hot varaliyu with paratha or rotla..
