Achari mushrooms

Mushrooms are one of the best ingredients in my vegetarian world. Whether you toss them with butter, pepper and salt or dunk them in cheese sauce, curry them up with green peas or bake them with cheddar they rock at my table any time of the day! Loads of fiber and vitamins just add a few twinkling stars on the health quotient too. When it takes only 15 minutes to cook! I jump out of joy on a lazy day!

Wash 10 pieces of mushrooms very well and remove the cap of the mushrooms from the stem.
Now heat 2 to 4 tablespoons of white oil in a non stick pan and as it heats up add 1 teaspoon of panch foron(the mixture of fennel seeds, onion seeds, fenugreek seeds, cumin seeds and celery seeds/ajwain) and a pinch of asafoetida (hing). - 2
As they stutter add 2 tablespoons of ginger garlic paste and saute well till the raw smell goe away. Add red chilli powder as per your taste and saute well for 2 minutes.
Add the mushrooms and saute for 1 minute only, add a tablespoon of vinegar and cook till it dries up. Serve hot with roti.
