  1. forthe dough:
  2. 1/2 cupall-purpose flour
  3. 1/2 tspsalt
  4. 2 tbspoil
  5. 1 tbspwater
  6. Pinchsalt
  7. for the filling:
  8. 1 tbspvegetable oil
  9. 1medium onion finely chopped
  10. 1 tbspgrated ginger
  11. 1 tspgrated garlic
  12. 1 tspsalt
  13. 1 cupboneless minced chicken
  14. 1/2 tspground cumin
  15. 1/2 tspground coriander
  16. 1/4 tspchilli powder
  17. 1 tspgaram masala
  18. 3/4chillies chopped (optional)

Cooking Instructions

    To make the dough, combine flour and salt in large mixing bowl, then stir in oil. Add water, little by little, to form a workable dough. Form the dough into a ball and cover it with a damp kitchen towel to rest at room temperature for 30 minutes.

    To make the filling,place a deep, heavy-bottomed saucepan over medium-high heat and add the oil. When oil is hot, add the onion, ginger, garlic, and 1/2 tsp salt and stir. Cook for 2 minutes or until onion softens. Then add minced chicken.

    Remaining 1/2 tsp salt, cumin, coriander and chilli powder. Cook 10 minutes, stirring occasionally, then sprinkle with garam masala.Stir and cook 5 more minutes. Taste for salt and add more if needed. Add chopped chillies if using.

    To shape the samosas, divide the dough into 6 equal portions, then roll each into a smooth ball on a well-floured surface. Roll each ball into a thin, square shape, u can use the knife to make square shape.Then place the filling in the middle and make flower shape.Then make all the samosa

    To fry the samosas, pour the oil into a deep saucepan in medium heat. Fry the samosas in batches. Fry for 15 minutes until golden. place on paper towels to drain extra oil.Serve hot with tomato sauce.
