Chicken Quesadillas

A classic twist on the traditional cheese quesadillas. Chicken quesadillas are very popular in Mexico City and the surrounding areas, and are a typical Mexican snack.
In addition to chicken quesadillas, I'll also share recipes for other popular varieties (beef, picadillo, mushrooms, huitlacoche, squash blossom, tripe...).

Sauté the chicken with the seasonings.

In a medium bowl, combine the chicken, sour cream, salsa, and cheese.

Heat a skillet over medium heat.
- 4
Make a sandwich with the mixture between two tortillas at a time. Add enough filling so there's about 3/4 inch (2 cm) between the filling and the edge of the tortilla.

Heat each quesadilla in the skillet, and when the bottom is lightly golden, flip it over. Serve with salsa and sour cream for dipping. Enjoy!
