Pineapple sago is a traditional Indian dessert and made with readily available materials.Adding grated coconut lends a rich creamy texture to the dessert.Serve topped with sweetened pineapple chunks and raisins or dry fruits of your choice.

Boil milk till half the quantity.Add sago and boil.Dilute milk powder with warm milk and add to boiling milk.If adding condensed milk,adjust sugar as condensed milk is sweet.In a separate pan add 1 tsp ghee and toss the pineapple.Add 1 tbsp sugar and little water and boil till syrup coats pineapple.Set aside to cool.

Remove brown skin of coconut and grate it.Add it to boiling sago kheer and boil till thick.Sprinkle cardamom powder.Allow the kheer and pineapple to cool completely.Spread a layer of pineapple at bottom of a glass bowl.Then pour the sago kheer.Garnish with raisins and caramelised pineapple on top and serve chilled pineapple delight.
