Granola

I’m gluten free and find most granolas too sweet so came up with this to put on yogurt or poached fruit.
The cup of dried fruit and seeds that I used included pumpkin seeds, sunflower seeds, almonds in equal portions to about 2/3 of a cup. I then added 6 Turkish apricots and 3 medjool dates roughly chopped and a spoon of coconut flakes.
This is not super sweet so add more syrup and/or fruit if you like it sweeter.

Preheat oven to 180C.

Melt coconut oil in microwave.

Combine all ingredients In a bowl and then spread on a lined oven tray. Place in oven. Keep a close eye on it as it burns easily.

Give a good stir after 10 minutes.

Remove from oven when your preferred level of brown is achieved. This was 15 mins.
