Stir-Fried Yellow Noodles with Soy Sauce (Pad See Ew)

I was missing yellow noodles. Usually, I only eat them during the vegetarian festival, but today I made Pad See Ew. Stir-fry over high heat in a wok to get that delicious smoky flavor. Add a little pickled chili vinegar and some chili flakes for extra flavor. This dish is filling and comforting. You can adjust the seasoning to your taste, but this version is a little salty and sweet.
Stir-Fried Yellow Noodles with Soy Sauce (Pad See Ew)

Chop the vegetables and prepare all ingredients.

Heat a wok and add a little oil. When hot, crack in the eggs and break the yolks. Stir-fry until just set, then remove and set aside. This keeps the eggs in pieces and prevents sticking. If you prefer the eggs coating the noodles, you can skip this step and add the eggs directly while stir-frying.

Add a little more oil to the wok. Stir-fry the pork and garlic over high heat. Add the soaked shiitake mushrooms and continue to stir-fry until the pork is cooked through. (Today I used marinated pork and seasoned mushrooms.)

Add the yellow noodles. Season with light soy sauce, sweet dark soy sauce, sugar, and oyster sauce. Stir-fry to combine, then pour 1/4 cup water around the edge of the wok to help the noodles cook and soften. Add the cooked eggs, break them into small pieces, and mix everything together.

Add the Chinese broccoli and stir-fry until the vegetables are cooked. Serve hot.
