Slice the chicken breasts horizontally and butterfly them. Flatten them evenly.

Mix all marinade ingredients and soak the chicken in buttermilk for at least 2 hours (soaking makes it juicier).

Coat the marinated chicken in the flour mixture (flour + cornstarch + salt + black pepper).

Dip the chicken in beaten eggs. Then coat the egg-washed chicken in crushed cornflakes and set aside for 20 minutes.

Deep fry in oil. (Do not place on paper towels, as this makes the fried chicken soggy. Use a wire rack instead.)

Spread pizza sauce over the fried chicken, then top with mozzarella cheese, oregano, and chili flakes (add any toppings you like). Bake and broil in a preheated oven for 8-10 minutes, until the cheese melts.
