Low-Calorie Vegan Linguine which is full of flavour and better than the sum of its parts! This can also be served cold as a pasta salad.
Steps

Put lime juice and zest into a medium bowl with the avocado, tomatoes, coriander, onion (or chives) and chilli, if using, and mix well.

Cook the pasta till al dente or however you prefer your pasta cooked.
- 3
Drain the pasta, toss into the bowl and mix well. Season to taste with salt and pepper before serving whilst still warm, or cold.
