Serves 2 servin
  • 115 gWholewheat Linguine
  • 1Lime, Zested and Juiced
  • 1Avocado, Stoned, Peeled and Chopped
  • 2Large Ripe Tomatoes, Chopped
  • Halfa Pack of Fresh Coriander, Chopped
  • 1Red Onion, Finely Chopped (or alternatively Chives)
  • 1Red Chilli, Deseeded and Finely Chopped (Optional)

  1. 1

    Put lime juice and zest into a medium bowl with the avocado, tomatoes, coriander, onion (or chives) and chilli, if using, and mix well.

  2. 2

    Cook the pasta till al dente or however you prefer your pasta cooked.

  3. 3

    Drain the pasta, toss into the bowl and mix well. Season to taste with salt and pepper before serving whilst still warm, or cold.
