Serves 2 servin
  1. 115 gWholewheat Linguine
  2. 1Lime, Zested and Juiced
  3. 1Avocado, Stoned, Peeled and Chopped
  4. 2Large Ripe Tomatoes, Chopped
  5. Halfa Pack of Fresh Coriander, Chopped
  6. 1Red Onion, Finely Chopped (or alternatively Chives)
  7. 1Red Chilli, Deseeded and Finely Chopped (Optional)

  1. 1

    Put lime juice and zest into a medium bowl with the avocado, tomatoes, coriander, onion (or chives) and chilli, if using, and mix well.

  2. 2

    Cook the pasta till al dente or however you prefer your pasta cooked.

  3. 3

    Drain the pasta, toss into the bowl and mix well. Season to taste with salt and pepper before serving whilst still warm, or cold.
