Extra firm tofu, cubed and dried • Peanut oil, 1” deep in skillet • Shallots • Apple quarters • Button mushrooms • Red Cherry tomatoes • each salt, pepper, onion powder, garlic powder, and Tbs each cornstarch and flour • Peanut sauce from cup fresh peanuts, 2 kemiri nuts, cup dried coconut, 2 Tbs soy sauce, 2 Tbs palm sugar and Tbs fermented red pepper sauce • peanut oil, to be filtered and reused • Serve with cup of steamed sushi rice from 1/2 cup dry rice
