Ingredients

2 people
  • 1 lbpork belly, sliced into 1'' cubes
  • 4 piecesrock sugar (or 1 1/2 tbsp white granulated or brown sugar)
  • 3 tbspdark soy sauce (or regular soy sauce) NOTE: The color will be significantly lighter)
  • 2 stalkgreen onion
  • 2-3 slicesginger
  • 2-3 clovesgarlic, lightly smashed
  • 8 cupswater, divided
  • optional: 1 tbsp sichuan peppercorn, whole

    Add cubed pork belly and 4 cups of water into saucepan. Bring to a boil for 2 minutes before discarding blanching water. Rinse with cold water.

    Add all ingredients into the saucepan and bring to a boil. Lower the temperature to low and simmer for 45 minutes or until fork tender.

    Serve with rice and enjoy!
