Marinated Eggs (Korean Mayak Marinade 마약계란)

This is soft boiled eggs marinated in a mayak sauce also known as "drug eggs" because of how addicting the sauce is. It's sweet, spicy, umami, garlicky, and balanced.
You can also use this marinade/sauce for tofu, dumplings, or even noodles!
The base of my sauce recipe is perfectly balanced, I would just change the ratio of jalapeños/peppers used depending on your spice tolerance! If you don't like sesame seeds, you can sub that out.
Note: The eggs do get firmer in the marinade due to the salt and sugar content. It's similar to a gentle curing process. If you want the yolk to stay soft, I would marinate it no longer than 6 hours. Longer than that, the yolk turns jammy and fudgy like the photo in my last step.
If you like things extra spicy, I would add in some Thai chilis!

Cooking Instructions

Boil 8 eggs (10 eggs if you think some will crack). 6 mins for soft boiled eggs and put the eggs in an ice bath right away.

Prep, wash, and cut ingredients as shown below.

Create sauce mixture in an airtight container (taste test and adjust if needed).

Add soft boiled eggs in marinade and fridge for a minimum of 4-6 hours.

Enjoy the next day with a bowl of rice.

I had some garlic-flavored marinated baby eggplant from a department store deli section. The baby eggplant had been deep-fried and soaked well in a refreshing and delicious marinade!I made some at home using cheap regular eggplant! I cooked them in the frying pan and combined them with the very well-matching tomato marinade to make this a type of salad.
