A lunch box idea with a sneaked in bit of bran for fiber and to assist with and improve digestion. I always sneak a bit of bran in because children don’t like vegetables.
Cooking Instructions

Fry the bacon for 3 minutes, on medium heat.

Add the mushrooms and fry for a further 4 minutes. Season with salt and pepper.

Turn the stove off and cool for 5 minutes. Mix the eggs, cream, bran and cheese, add the bacon and mushrooms.
- 4
Pour into a muffin pan and bake for 18 - 20 minutes.
- 5
Remove from oven and allow to cool off for 5 minutes before serving.

I included a ton of vegetables that I had in the fridge too.Eliminate any excess water in both the tofu and the vegetables to prevent this from becoming watery.
