Oat Shiitake Mushroom Soup with Prawns

In cold weather like this, the hot menu must come. In my late 40 years old body needs a lot of fiber, think hard, we don’t like to eat white rice anymore because of a lot of carb, so it is the source of using rolled oats instead. Add some aroma as well, shiitake mushroom soup, chewed with rock sugar “umami” soup.

Cooking Instructions

Boil water with Shiitake Mushroom, salt, rock sugar and soy sauce. Boiled the prawns in soup a few mins. Scoops them down.

Add oats, hot water into a pot allow to stand for till the soup is ready.

Scoop the oats into a bowl. Put the prawns, sprinkle celery, spring onion, ginger and pepper. Pour Shiitake Mushroom on it. Ready to serve ‼️

I am a huge fan of mushroom soup. As much as I remember, I used to survive on Campbell's mushroom soup during my military years. That and some instant ramen. I had experimented, researched and tasted my fair share of mushroom soups. Eventually, I had settled for Heston Blumenthal's version. I love how he adds potatoes to enhance the creaminess of the soup and also the stacking aroma from the addition of leeks.I used a varieties of mushrooms instead of just one. There are so many to choose from, the wild expensive to the underrated cheaper ones. In the end, I settled for my 2 favorite; shiitake and Swiss brown button mushrooms.
