Ingredients

6 servings
+- 7 hours
  1. For the Panacotta:
  2. 3 teaspoonsgelatin powder
  3. 250 mlmilk
  4. 250 mldouble cream
  5. 100 mlsugar
  6. 1 teaspoonvanilla essence
  7. For the jelly:
  8. 1 packetraspberry jelly
  9. 500 mlboiling water
  10. To Decorate:
  11. Strawberry Purée
  12. leavesMint
  13. Fresh Cherries

Cooking Instructions

    To Prepare jelly, pour the jelly powder in a bowl and add the hot water. Stir well until it's all dissolved. Let it completely (cold). Pour into the 6 medium glasses, let it set in the fridge, tilting the glasses so that the jelly sets on one side of the glasses. Leave to set for 3-4 hours.

    Meanwhile, prepare the Panacotta: Dissolve the gelatin in half cup hot water and set aside.

    Place the milk, cream, vanilla essence and sugar into a pan and bring to a simmer. then add the liquid gelatin to the pan, and take off the heat. Stir until all the ingredients are combined. Set aside to completely cool.

    Remove the set jellies from the fridge and place them upright on the tray. Pour the cold Panacotta on to each glass, covering the jelly completely. Place the tray with glasses into the fridge and until the Panacotta has set, about 3-4 hours.

    Remove from the fridge and pour a thin layer of Strawberry puree on top of the Panacotta in each glass bowl. Top up with one cherry and one mint leaf on each one. Then serve
