To prepare the dough:
• Grease a 12 inch pie pan. A pan with a removable base makes removing the pie easier after baking
• Roll the pastry with a rolling pin on a flour dusted flat surface, ensure the pastry is about 1 ½ inch broader than the base of the pie pan
• Roll the pastry on the rolling pin and layer over the greased pie pan
• Carefully press down with a dot of kitchen paper so the base and sides of the pie pan are covered. - 2
To prepare the filling:
• Cook the zucchini, broccoli, and beans in a pot with water for 5 minutes
• Drain and rinse with cold water
• Transfer the veggies to a food processor, add the other ingredients and pulse to combine - 3
To finish the dish:
• Scoop the vegetable mix in the pie pan and spread evenly
• Bake the pie in a 200 degrees Celsius oven for 40 minutes
• Allow cooling for 10 minutes before removing the pie from the pan. This will prevent the pie from breaking. - 4
To serve the dish:
• Serve the pie hot or cold
• This pie is great for your kids to take to school as a wholesome snack.
