Mango Salad with Dried Shrimp

Som Tam Mamuang- Thai mango salad. In Thai cuisine there are mainly 4 methods of making salads- Yam, Tam, Lap and Phla. This salad uses the Tam method where the basic ingredients for the dressing are sugar, garlic, chillies, lime juice and fish sauce.
Mango Salad with Dried Shrimp

Step 1 – Soak the dried shrimp in a bowl for 10-30 mins

Step 2 – Dressing preparation for the salad
In a bowl mix 3 tbsp of sugar, 2 tbsp lemon juice, 2 tsp chopped red chilli and 4 tbsp fish sauce. Mix well and set aside. - 3
Step 3 – Strain the soaked shrimp

Step 4 – Toast the cashew and peanuts on med heat for 5 mins.

Step 5 – Frying the shrimp
Heat 2 tsp oil on med heat. Fry the shrimps for 8 minutes. After 8 mins add 2 tsp sesame oil and 1.5 tsp minced garlic to the shrimp and cook for 2 mins. Remove and let it cool down - 6
Step 6 – Shredding the mangoes and carrot
Shred the mangoes first then the carrot on a bowl. I used a hand shredder. You can use a mandolin or hand slice them. - 7
Step 7 – Mix everything
Add the onions, basil leaves, mint leaves, fresh coriander, sliced tomatoes, cashew and peanuts, fried shrimp, salad dressing to the bowl and mix everything. - 8
Step 8- optional garnishing with fried onions and fried garlic bits.
