Spicy Salmon Poke Bowl

Hawaii’s favorite dish- The Poke Bowl. It is believed that poke bowls were prepared by native Polynesians since ancient times. Poke in Hawaiian means to slice or cut crosswise into pieces. The idea of a poke bowl is to cut raw fish into chunks or slices, mix with sauces and seasonings, served with a variety of greens and fruits on rice, served in a bowl. Traditional poke seasonings have been heavily influenced by Japanese and other Asian cuisines. These days poke bowls are hugely popular. Its one of my favorite. Here’s my take on Spicy Salmon Poke Bowl.

Step 1 – Cut the sushi grade salmon fillet (skinless) into chunks

Step 2- Making the spicy sauce.
Mix mayo, sriracha and soy sauce in a bowl. That’s it. - 3
Step 3- Sprinkle some chopped scallion and toasted sesame seeds on the salmon chunks. Pour the spicy sauce on the salmon and mix.

Step 4 – Making wet seasoning for the rice
In a bowl mix rice vinegar and sugar - 5
Step 5- Pour the mix in bowl of precooked sushi rice. Sprinkle some furikake. It is optional but it adds a lot of flavor. Then mix well.

Step 6- Make a ball of rice on the serving plate. Assemble it with the dried seaweed, avocado, carrots, red cabbage, sliced cucumber and radish circles, spicy salmon, edamame and seaweed salad. Enjoy !!
