Another traditional Mexican recipe, just like my mother used to make. There are a thousand ways to make menudo, but for me, my mother's recipes are always the best.

First, thoroughly clean the tripe to remove any fat, then soak it in lime juice or a little vinegar.

Refrigerate overnight, then rinse the tripe very well in the morning.

I use 2 pots because the beef feet take longer to cook.

Heat water and add the tripe along with half an onion and half a head of garlic to cook.

Let the tripe cook for 45 minutes and the beef feet a bit longer.

Let the pressure cooker cool before opening, then remove the beef feet and combine with the tripe. Add salt and oregano, and bring everything to a boil together.
