Ugu egg sauce

I'm a fan of egg sauce so this time around I decided to do it with a twist, that's why I added ugu leaves. Ugu leaves are healthy. It gave my sauce a perfect taste and look. Do give it a try!

In a pot heat the oil and and add the sliced onions.fry for 3mins.add the crushed pepper, ginger and garlic pastes.stir and fry for 2mins.add the tomatoes and ugu leaves. The water in the tomatoes will help cook the leaves.add seasoning cubes,salt and mix spices.stir and cook till water absorbs completely.

In a bowl crack the eggs and beat. Add the beaten eggs gradually into the pot.let it sit for few seconds before stirring. Stir and cook till oil is visible on the top. Serve with rice, pasta,boiled yam or anything of choice. I served mine with fateera. Enjoy!
