Ingredients

30 minutes
4 person
  • 2 cupsLong grain aromatic rice
  • 2 cupsdiced mixed vegetables (cauliflower,beans,green peas, carrots,corn kernels)
  • 4 tablespoonghee/refined oil
  • 1/4 cupcashew nuts
  • 2bay leaves
  • 1black cardamom
  • 5-6green cardamoms
  • 2-4cloves
  • 1 inchcinnamon stick
  • 8-10peppercorns
  • 2 teaspoonsalt
  • 1 teaspoonsugar
  • 2.5 cupswarm water

Steps

30 minutes

    First soak the rice in water for 30 minutes.

    Now make the vegetables ready then in a deep vessel/ pressure cooker heat some ghee & add all the whole spices first & wait until the aroma comes out.

    In that oil first add the cauliflower florets & fry for a while & then add rest of the vegetables & fry them untill the raw smell goes away.

    Once the veggies are nicely done add cashew nuts & give it a good mix with all the other veggies.

    Now add the presoaked rice into the pan & carefully mix it with other ingredients on a medium high flame. On this point don't use a steel spatula otherwise the rice going to be broke.

    After that add salt & sugar & finally add the warm water. The ratio of the rice & water should be 1:2 but as I have already soaked the rice for a moderate period of time so I am using water for rice.

    Now close the lid & cook it on medium heat until all the water is absorbed then on a low flame cook another 4-5 minutes until the rice is fully done.

    In case you are using pressure cooker, cook upto one whistle on medium high heat & take off the cooker from heat & let it rest for another 15 minutes then open the lid.

    Now the pulao is done & ready to be served. Enjoy it with your favorite side dish or you can also eat this with raita.
