Rava ladoo or Rava Laddu or rava urundai is an very easy to prepare sweet for all occasions! This is one of the very basic ladoo we make for festivals like diwali.

Rava ladoo or Rava Laddu or rava urundai is an very easy to prepare sweet for all occasions! This is one of the very basic ladoo we make for festivals like diwali.
Steps

Heat a pan and add the rava,reduce flame and roast the rava until a nice aroma comes,make sure to not change the rava colour and roast evenly. To ensure this,keep stirring continuously.

Cool down and grind it into a very fine powder using mixer. (If you are making in bulk,you can grind in milk).

Powder the sugar into a very fine powder as well,along with elachi.Transfer the powdered rava and sugar to a large bowl. (if you want you can sieve both to get a smooth finish ladoo).

Fry broken cashews in the ghee and add these to the rava and sugar mixture.

Mix thoroughly. First you can use a ladle to mix as the ghee will be hot. Wait until it is warm enough to handle.

Make small balls out of this mixture immediately, roll it tight,i f you could not roll and the mixture is too dry, add more warm ghee to it and make balls again. Ladoos are ready to enjoy.

TIPS : At times we add milk as binding agent, but I avoid it these days. Make sure to powder the rava very very fine,if it's coarse,it will not hold the shape for long and easily get broken. Add warm,heated ghee and make laddu immediately as this will give you mighty ladoos won't break easily. Adding more ghee makes the ladoo look dull in colour. So add accordingly.
