This stew comes together very quickly and tastes even better the next day. I usually make it in the evening to take to work for lunch the next day—just heat it up in the microwave for a couple of minutes and it's ready.

In a pot, heat olive oil and sauté the green onion, garlic, and green bell pepper until soft and translucent.

Meanwhile, drain the canned white beans and rinse them under cold water using a colander.

When the vegetables are golden, add the diced ham, chorizo (cut into small pieces), and sweet paprika. Stir, then immediately add the beans and 2 cups of water (about 480 ml). If the beans aren't covered, add a little more water.

Add the dried cayenne pepper, bay leaf, a pinch of salt, and dried garlic. Simmer over medium heat until the stew thickens and the beans are visible on top.

If you don't want it spicy, leave out the cayenne pepper. For a mild kick, you can remove the cayenne pepper halfway through cooking.
