The ethnic scrumptious humble Egyptian pies ( fteer mshaltet) happened to be one of my favorite food on Earth. Never thought I will make it though, as it is cheep and available in every bakery in my home country. Since I moved to the Uk I didn’t have the chance to taste it ☹️. My family is having this👆🏻 for lunch tomorrow and I thought it’s now the perfect time to beat the beast as I always thought it’s a tough recipe. Cut it into 18 small balls - cover with oil and let them rest for an hour - each ball in the buttery mixture until well coated then make it as thin and transparent as u can (it’s ok to have halls :) )
- but them in layers (9 each)
- transfer into non stick sheet or covered with baking papers, fold the peripheries under the dough and brush it with the butter again

I thought you needed a leaf shaped cookie cutter to make leaf pies. Then I saw in another recipe that you can use a round cookie cutter, and I've been doing that ever since. You could probably use a cup to cut the dough, but I think cutting with a cookie cutter's sharp edge gives it a more definite edge.Use the leftover dough from cutting out the shapes and just reform it and add some veins and you'll have another leaf.If you end up using store bought puff pastry, these can be easily made by starting at Step 6. Baking at the high temperature the whole way though will give you pies that are lacking its light texture (I think this is because the reduced baking time will cause it to not bake all the way through). I’ve been working on my baking skills this week, mainly because the holidays are coming up. I haven’t made any Christmas Cookies or Cakes these past few years, so as I’m sitting here thinking what should I add to my Christmas baking list. 🙂I have wanted to make this pastry for a while and I found Semolina at the supermarket so I gave it try yesterday and it turned out so creamy and delicious. This Custard pie a popular breakfast pastry in Greece as the bagel is in the US…:) This pie’s origin is from Northern Greece a city called Serres, and become very popular in Thessaloniki and then expanded to the rest of Greece. It is eaten warm with sugar powder and cinnamon sprinkled all over. Yummmyyyy!!! I forgot to mention that there is also another version of this pastry with a cheese filling.. I have tried it but it reminds me of eating a Cheese puff (Tyropita) rather than the sweet taste of custard…:)You can find shops/bakeries all around Greece that are open from very early in the morning for the morning rush hour, but there are shops that are open 24/7 for those who have been out late night and just wanted to eat something other than Souvlaki :).
