Ingredients

  1. ForDough:
  2. 2 cupsall-purpose flour
  3. 2 tablespoonsoil
  4. to tasteSalt
  5. 2 tspsugar
  6. 1 tspbaking powder
  7. 1/2 cupyogurt
  8. Forthe stuffing:
  9. 2 boiled and,mashed potato
  10. 1 cuppaneer crumbs
  11. 3 tablespoonsgreen chillies
  12. 1 tablespoonchaat masala powder
  13. 1 tspgaram masala powder
  14. 1 tspturmeric powder
  15. 1 tspcumin powder
  16. 1 tspcoriander powder
  17. 1 tspginger garlic paste
  18. to tasteSalt
  19. 2 tablespoonsmint leaves
  20. 2 tablespoonscoriander leaves
  21. ForToppings :
  22. as requiredButter
  23. 1 tspCrushed coriander seeds
  24. 1 tspCrushed cumin seeds
  25. as per tasteRed chilli powder

Cooking Instructions

    For the dough:
    In a mixing bowl, take flour and salt. Mix them well. Add in baking powder, yogurt, sugar and combine well. Knead the dough for 5 to 7 minutes
    Grease a bowl and place the dough. Apply some oil. Cover it with plastic wrap and let it ferment for an hour.

    For the Stuffing:
    Take all the ingredients in a bowl. Mix them well and divide into 12 equal size balls. Keep it aside.

    To make the kulcha:
    Dust the working surface with a little bit of all purpose flour. Take out the dough onto the working surface Knead the dough once with help of little bit flour. Divide them into equal size balls.Take one ball and gently press it out a bit. Place prepared stuffing ball in the middle and close it into a ball. Do the same process with the rest of the balls.

    Take one ball and spread the dough using your finger or rolling pin into a thick paratha. Sprinkle some coriander seeds, cumin seeds,chilli powder, and cilantro.

    Appy some water on one side of the kulcha and place the rolled kulcha on a regular tawa, apply some ghee both the sides and cook them from both the sides over medium to high heat.

    Serve it hot.
