Ingredients

  • 2.5 cupsand 2 tbsp plain flour
  • 1.5 cupswhite sugar
  • 1.5 tspbaking soda
  • 3/4 tspsalt
  • 1.5 cupssoy milk
  • 0.5 cupolive oil
  • 1 tbspwhite vinegar
  • 1 tspvanilla extract
  • 3 tsplemon extract
  • 2 tbsplemon zest
  • For icing
  • 4.5 cupspowdered sugar
  • 0.5 cupvegan butter
  • 2 tsplemon extract
  • 3.5 tbsplemon juice

Steps

  1. 1

    Preheat oven to 180 Celsius

    Prepare 2 8-inch cake pans

  3. 3

    Sift flour, add sugar, baking soda, salt, then add soy milk, olive oil, vinegar, vanilla, lemon extract and lemon zest

  4. 4

    Bake for 30 mins
