Raisin Soda Bread

Ingredients

  1. 4 cupsplain flour
  2. 1/4 cupsugar
  3. 1+ 1/2 tsp of salt
  4. 1 tspbaking soda
  5. 1/2 stickbutter (1/4 cup / 56g)
  6. 1+ 3/4 cups of buttermilk
  7. 1egg
  8. 1 cupraisins

Cooking Instructions

    Mix flour, sugar, salt and baking soda and butter together.

    Mix egg and buttermilk together. Can make buttermilk by adding white vinegar or cider vinegar to milk and leave for 10 minutes to turn into buttermilk. Flavour of cider vinegar will evaporate and not affect the taste of the bread.

    Add wet ingredients to dry ingredients and mix for 1 to 2 minutes. This makes a wet, sticky dough but may need to add a little more flour for handling.

    Add raisins if using. If raisins are not being added to the mixture, this will be more like a traditional soda bread.

    Put mixture into baking tin/dish and bake at 375°C / 190°F for 45 to 55 minutes.
