First, wash the quinces thoroughly to remove the fuzzy coating.
Dry the quinces well with paper towels.
Peel all the quinces and remove the cores.
Cut them into medium-sized pieces.
Add the quince pieces and sugar to the slow cooker.
Cover and cook on high for 8 hours. - 2
Cook for 4 hours with the lid closed, then 4 more hours with the lid open.
After this time, there will still be some liquid—this is normal.
Blend the mixture with an immersion blender until very smooth.
Pour the quince paste into a rectangular dish, let it cool, then refrigerate overnight.
