Take maida, rice flour, baking soda, asafoetida powder, chilli powder and salt in a bowl

Pour water and knead to make a smooth dough

Add oil to the dough and knead well again

Add curry leaves and soaked Bengal gram and knead well

Lastly add sesame seeds or kala jeera and mix well and set aside for half an hour

Now roll the dough lengthwise into a long cylinder, roll and shape little dough into a lemon size ball

Repeat the process for the entire dough

Now toss a dough ball in little oil or maida and then flatten it to a thin thattai using rolling pin

Flatten the remaining dough balls into thattai

Now heat oil in a pan and fry Thattais one by one or a few at a time, turning over both sides

Remove when the Thattais are crispy, let it cool some time, after cool store in a air tight jar for a week
