Quinoa phirni with caramel flavour

#deepawali
Firni is a traditional Indian dessert served during special occasions. The main ingredients of firni are ground rice, milk, and dry fruits. This time I made a special firni with superfood quinoa.Quinoa has nutty flavour and so it's good idea to make phirni with this highly nutritious food. I enhanced it's flavour by adding some caramelized sugar to it. I also use a special ingredient to make the firni light and fluffy. I am sure, you will love this special dessert.

Steps
- 1
Wash and rinse quinoa under running water to remove any bitterness from the grains.
- 2
Heat ghee in a heavy bottomed pan.
- 3
Add in the rinsed quinoa and stir fry for about 5 minutes in medium heat. You will get a nice aroma from the pan.
- 4
When nice aroma starts emitting, add hot water to the pan, also add a pinch of salt and cook.
- 5
When quinoa becomes soft and water almost dries out, add milk and sugar.
- 6
Boil for 4-5 minutes to reduce the milk. Add cardamom powder.
- 7
In the meantime add granulated sugar and water in a pan and bring to heat. Don't stir or touch the mixture.
- 8
When the mixture changes colour to light golden brown(that means sugar caramelizes), transfer the mixture to the firni immediately.
- 9
Give phirni a good mix and remove from heat to cool down.
- 10
When quinoa firni cools down to room temperature, add whipped cream.
- 11
Also add in crushed nuts. I have only walnuts in my pantry. So I used them, you can add in any nuts of your choice.
- 12
Mix them nicely so that cream incorporates to firni. Transfer to a serving bowl and keep in the refrigerator to chill. You can also serve them in room temperature.
