Heat 1tbsp olive oil in a pan. Fry onion until it starts to brown and soften.

Add basil, oregano, Cayenne pepper and garlic (minced). Stir fry for 5 mins.

Add vegan mince and season. Stir fry for 5 minutes.

Pour in chopped yomatoes, add balsamic vinegar and red pepper sauce. Simmer for 20 minutes.

Cook pasta for 10 minutes in boiling water. Pre heat oven to 200/180 fan.

Combine all together in over proof dish and sprinkle over vegan cheese and cashew nuts

Bake for 20 minutes, then place under grill for 2 minutes.
