A quick and delicious recipe—this tasty dish is ready in 20 minutes and serves 5 or 6 people, depending on portion size.

Rinse the shrimp and use a toothpick to remove the vein along the back. I like to leave the shells and tails on for more flavor, but that's optional. Melt the butter, add finely chopped garlic, then add the shrimp. Season with salt and pepper and stir.

Blend the ketchup, tomato puree, lime juice, chipotle chiles, and arbol chiles (toast the arbol chiles over heat first). Add a little water. Once the shrimp change color, add the sauce, a bit more salt and pepper, and cook for 3 more minutes. You can add more water depending on how thick or thin you like the sauce.

Serve with white rice. These are delicious! Adjust the spice level to your taste by adding more arbol chiles or even some habanero peppers.
