Veg Molee gravy
Steps

Add coconut oil to an earthen pot or cooking pan.

Now add mustard seeds and wait for it to splatter.

Once that splattered add curry leaves to that and immediately add the slit green chilli

Let that cook for 30 seconds.

Now add the onion and sprinkle some salt and cook until the onions turn pink.

Now add ginger and garlic paste and cook until the raw smell vanishes.

Now add the tomatoes to this and sprinkle a bit of salt to help it cook faster and close the pan.

Once the oil gets split from the mixture add potatoes and carrot to it and cook for few more minutes by closing the pan.

Once the vegetables are cooked 3/4 add the masala (turmeric powder/chilli powder/black pepper/cumin powder/jeera powder-according to the spice required).

Once the masalas blend well with the rest of the mixture pour some water to cook.

After few mins pour the coconut milk to this and cook until the gravy starts to curdle.

Now once the gravy is cooked garnish it with coriander leaves and serve it with rice or dosa.
